Lion’s mane (Hericium erinaceus) has rapidly become one of the most sought-after gourmet and functional mushrooms in the world. With its stunning cascading white spines, lobster-like culinary flavor, and promising research on cognitive health benefits, it’s no surprise this species is a top seller at MycoStock.
Growing Lion’s Mane at Home
Lion’s mane grows well on supplemented hardwood sawdust or our all-in-one grow bags. It colonizes at 70-75°F and fruits best at 60-70°F with high humidity (90-95%) and strong fresh air exchange. Expect beautiful white, cascading fruit bodies 10-14 days after pinning begins. Harvest when spines are about 1/2 inch long and before any yellowing appears.
Cooking with Lion’s Mane
Tear lion’s mane into thick slabs or chunks, then sear in butter over medium-high heat until golden and crispy on the outside. The texture is remarkably similar to crab or lobster meat, making it a popular seafood substitute. It’s excellent in pasta dishes, as “crab” cakes, or simply pan-seared with garlic butter and a squeeze of lemon.
Health and Wellness Research
Lion’s mane has been the subject of growing scientific interest for its potential neuroprotective properties. Research suggests it may support nerve growth factor (NGF) production, which plays a role in brain cell maintenance and repair. Many people incorporate lion’s mane into their daily routine as a supplement alongside culinary use.
