Selecting Fresh Mushrooms
Look for mushrooms that are firm, dry to the touch, and free of dark spots or sliminess. Fresh oyster mushrooms should have clean, unwilted edges. Lion’s mane should be white to slightly cream-colored with no browning. Shiitake caps should be firm and slightly curved under.
Storage Best Practices
Store fresh mushrooms in a paper bag or wrapped loosely in a paper towel inside the refrigerator. Avoid plastic bags, which trap moisture and accelerate spoilage. Most fresh gourmet mushrooms will keep 5-7 days when stored properly.
Drying Mushrooms for Long-Term Storage
A food dehydrator is the easiest way to preserve your mushroom harvest. Slice mushrooms evenly (about 1/4 inch thick) and dry at 125-135°F until completely crisp. Store dried mushrooms in airtight containers in a cool, dark place for up to a year.
Freezing Mushrooms
For longer-term storage, sauté mushrooms first, then freeze in portion-sized containers. Raw mushrooms can also be frozen on a sheet pan before transferring to freezer bags, though texture will change upon thawing.
